High Protein Cottage Cheese Buns

Looking for a healthy alternative when you’re craving bread? These easy cottage cheese buns are soft, delicious, and packed with protein, making them a great choice whether you need something for breakfast, a quick lunch, or a satisfying snack in between.




Ingredients (for 6 buns)


  • 250 g cottage cheese

  • 1 egg

  • 1 cup gluten-free 1:1 flour blend (or all-purpose flour)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 1 egg white

  • optional: mix in pumpkin seeds, flax seeds, sunflower seeds, nutritional yeast, hemp seeds or garlic powder before shaping the buns

  • topping options: sesame seed, poppy seeds, pumpkin seeds, flaky sea salt



Direction


  1. Preheat your oven to 365°F (180°C) and line a baking tray with parchment paper.

  2. In a large bowl, combine the flour, baking powder, baking soda, and salt.

  3. Add the cottage cheese and egg, then mix until a dough forms.

  4. If using, gently fold in pumpkin seeds, sunflower seeds, nutritional yeast, or garlic powder.

  5. Divide the dough into 6–8 buns and shape them with your hands.

  6. Place the buns on the prepared baking tray and brush the tops with egg white.

  7. Sprinkle with: sesame seeds, poppy seeds, pumpkin seeds, or a little flaky sea salt.

  8. Bake for 20–30 minutes, or until the buns are golden brown and cooked through.

  9. Let them cool for a few minutes before serving.
